Tahbilk Shiraz

Bold by Nature, Timeless by Tradition

Tahbilk Shiraz  is crafted with a commitment to traditional wine-making values.
Fermentation takes place in original open vats over 155 years old, with maturation then in similarly aged large French oak prior to bottling.
Smaller French and American oak barrels are also used, with the wine from these blended back during the final filtering and bottling.
The resultant releases are noted as being fruit-driven wines of much flavour and substance, proven over the years to develop added character when cellared.

Tahbilk 2018 'Eric Stevens Purbrick' Shiraz

When crafting wines from only the best Estate fruit available from a vintage noted for bright, true-to-varietal Reds with concentration and depth then the anticipation is high. 2018 ‘Eric Stevens Purbrick’ Shiraz absolutely delivers. Ripe dark and red berry fruits are nuanced with liquorice, earth and ground black pepper notes. Savoury oak characters and seamless tannins contribute a truly distinctive release. Cellaring to 2033/2038 will realise further complexity.

Tahbilk 2015 'Centennial' Old Block Shiraz

This exceptional vintage release from 2015, with vines averaging 158 years in age, showcases the best of our old-world winemaking style.
A richly flavoured backbone of dark cherry and red berry fruits mesh seamlessly with dried herb, savoury and truffle flavours make this an elegant and sophisticated wine.
Time spent in a mix of new and older French oak barrels adds texture, spice and cedar notes. The tannins are fine grained … the finish prodigiously long.

Tahbilk 2016 Shiraz

The colour has lightened with bottle age and now more of a light to medium pale ruby.
Incredibly classic and unique aged Tahbilk aromas. Dried plum, burnt sage bush and milled sawdust. The tannins have softened and are well integrated into the palate where you will find supple and juicy red fruit, lovely white pepper, clove and nutmeg spice lingering on. Still got a little bit of give with acidity in check, enjoy over the next 10 years ... easily!

Tahbilk 2019 Shiraz Cabernet

This Estate blend of 53% Shiraz and 47% Cabernet Sauvignon delivers a wine of great character and easy appeal with fresh and lifted plum, spice and earthy characters woven through black olive, mint and dark berry fruits.Delicious drinking now with meaty stews and char-grilled steaks, or hide it in the cellar to see additional complexity develop.

Tahbilk 2022 Shiraz

A few swirls of the glass has ripe plum, blackberry and violet aromas coming through, with white pepper and boysenberry rounding out the nose.
The palate has a surprising initial softness … the tannin glides across the back. There is a tart cranberry acidity that knocks the balance off making it a little bit more crunchy drinking young but will do okay with a bit of age under its belt. Very much a cool climate style Shiraz which is reflective of the 2022 vintage.
Drink now over the next 2 years, rest for the following 3-5 years, then enjoy for the next 10 years.
