The Tahbilk '1927 Vines' Story ...
These limited release wines are produced from the Estate’s 1927 planted Marsanne vines – some of the oldest in the world.
The fruit is harvested early at high natural acid levels. No chemicals are added and the juice then becomes fully oxidised. The clean juice is fermented at 11° to 15°C with the resultant wine ‘water’ white, flavourless and with high acid. The wine is bottled and then the magic happens.

The Tahbilk 'Old Vines' Cabernet Shiraz Story ...
The quintessentially Australian blending of Cabernet Sauvignon and Shiraz saw initial releases at Tahbilk from the 1957 and 1958 vintages under Eric Purbrick’s tutelage, believed to be the first such ‘Estate Grown’ blends in Australia.
The Estate is blessed with significant older vineyard blocks with, among others, Shiraz dating back to 1860 and 1933, and Cabernet Sauvignon to 1949.
It is selected of these aged vine plantings that are the primary source for the ‘OId Vines’ Cabernet Shiraz when, from the 2010 vintage, the blend returned and is now a permanent fixture of Tahbilk’s premium Reds portfolio. With a contributing average vine age of over 35 years they set a new standard for such releases from the Estate.

One of the first to place his faith in the future of Australian table wines, Eric Stevens Purbrick was at the forefront of varietal labelling in Australia; but perhaps his greatest legacy was to create the 'Special Bin' range of reds, beginning with a Shiraz in 1948.
Selected from the most outstanding casks produced on the Estate from a particular vintage, these wines became known as 'Reserve' in 1985. From 2002 they fittingly carry his name and signature: 'Eric Stevens Purbrick'. And so, a new legacy with its roots firmly planted in the history of the Estate was born.
