About this winei

Tahbilk Shiraz ... and Cabernet Sauvignon ... is crafted with a commitment to traditional wine-making values.

Fermentation takes place in original open vats over 155 years old, with maturation then in similarly aged large French oak prior to bottling.
Smaller French and American oak barrels are also used, with the wine from these blended back during the final filtering and bottling.
The resultant releases are noted as being fruit-driven wines of much flavour and substance, proven over the years to develop added character when cellared.

Blessed as we are on the Estate with significant old vine plantings, and the character that these mature vines bring, then an ‘Old Vines’ release from a highly rated vintage is eagerly anticipated. Richly flavoured and expressive, bay leaf, mint and tobacco aromas are joined by plum and berry fruits on a sinuous palate, with time in oak adding further intricacy to an impressive release that will realise added character with time in the bottle.
 

Tahbilk 2016 Shiraz | Museum Release

The colour has lightened with bottle age and now more of a light to medium pale ruby.
Incredibly classic and unique aged Tahbilk aromas. Dried plum, burnt sage bush and milled sawdust. The tannins have softened and are well integrated into the palate where you will find supple and juicy red fruit, lovely white pepper, clove and nutmeg spice lingering on. Still got a little bit of give with acidity in check, enjoy over the next 10 years ... easily!

Tahbilk 2022 Shiraz

A few swirls of the glass has ripe plum, blackberry and violet aromas coming through, with white pepper and boysenberry rounding out the nose.
The palate has a surprising initial softness … the tannin glides across the back. There is a tart cranberry acidity that knocks the balance off making it a little bit more crunchy drinking young but will do okay with a bit of age under its belt. Very much a cool climate style Shiraz which is reflective of the 2022 vintage.
Drink now over the next 2 years, rest for the following 3-5 years, then enjoy for the next 10 years.
