First planted at Tahbilk in the 1940s, Cabernet Sauvignon is one of the cornerstones of our Red Wine story.
Estate-grown in the unique Nagambie Lakes region, it reflects the influence of ancient soils and cooling waterways — producing wines of depth, structure and longevity.
Classic aromas of blackcurrant and dark berry fruit are layered with notes of mint, earth and fine-grained tannins, all hallmarks of cool-climate Cabernet. Traditional winemaking techniques, including open fermentation and oak maturation, ensure a style that is both elegant and cellar-worthy.
Crafted with care and shaped by over 160 years of winemaking heritage, Tahbilk Cabernet Sauvignon is a true expression of place and time.

The 2018 vintage delivered bright and true-to-varietal reds with concentration and depth of flavour no better illustrated than with this ‘Eric Stevens Purbrick’ Cabernet.
Rich, black-currant and dark fruits, eucalypt notes and earthy, gamey characters immediately engage on the nose and palate where Asian five spice and savoury hints add further complexity. A truly sublime ‘best of vintage’ release that will reward those cellaring out to 2038 and beyond.

Character and complexity define this bottle-aged Museum Cabernet Sauvignon. Great colour development reflecting the 9 years spent in bottle. Aged, also known as secondary, characters immediately hit the nose. Forest floor, mulch, freshly picked mushrooms. The fruit is dried; dried blueberries, dried figs, dried goji berries. Subtle charred oak creating depth of aromas on the nose. There is a youthfulness on the palate still shining through, lifted by tart blueberry and cranberry juice. More of the dried secondary notes on the palate ... savoury black truffle and charred oak. This aged Cabernet Sauvignon is full of complexity and tannins providing a lovely backbone to the wine which will keep it in good stead for up to 8 years.

Vibrant purple colour in the glass. Typical herbal characters shine through on the nose; eucalyptus, spearmint and cocoa nibs alongside delicate blueberry, blackberry and subtle rose florals. Intense fruit immediately hits the palate; fresh blueberries, wild berries and blackberries. Tannins are tight … feeling a little green and youthful ... however this will even out with time.
The acidity is atypical of the Cabernet Sauvignon varietal. Herbaceous edges with tomato and blackberry leaf. The wine’s structure has all the elements to age well in bottle. Drink now and then age 12 years and reap the benefits.
