HISTORY

First planted at Tahbilk in the 1940s, Cabernet Sauvignon has become a cornerstone of our red wine story. Estate-grown in the unique Nagambie Lakes region, it reflects the influence of ancient soils and cooling waterways — producing wines of depth, structure and longevity. Classic aromas of blackcurrant and dark berry fruit are layered with notes of mint, earth and fine-grained tannins, all hallmarks of cool-climate Cabernet. Traditional winemaking techniques, including open fermentation and oak maturation, ensure a style that is both elegant and cellar-worthy. Crafted with care and shaped by over 160 years of winemaking heritage, Tahbilk Cabernet Sauvignon is a true expression of place and time.

 

 

Old Vines Cabernet Shiraz - Generations in Every Pour


Tahbilk’s Old Vines Cabernet Shiraz is a tribute to the estate’s oldest, most treasured plantings — with Shiraz vines dating back to 1860 and Cabernet Sauvignon to the 1940s. This wine brings together two noble varieties in a blend that reflects both the strength of tradition and the depth of old vine character. Rich and full-bodied, it layers blackcurrant, plum and spice with earthy complexity, fine tannins, and a long, elegant finish. Crafted only in exceptional vintages and built for cellaring, it’s a true expression of Tahbilk’s legacy and a benchmark for classic Australian reds.

 

 

Eric Stevens Purbrick Cabernet Sauvignon - A Tribute to a Pioneer


Named in honour of Tahbilk’s legendary winemaking figure, Eric Purbrick, this flagship Cabernet Sauvignon is crafted from some of the estate’s oldest and most exceptional vineyard parcels. First released in 1979, it represents the pinnacle of Tahbilk’s Cabernet expression — a wine of depth, elegance, and longevity. Displaying classic varietal notes of blackcurrant, dark plum and fine cedar spice, the wine is structured yet graceful, with beautifully integrated oak and tannins that support long-term cellaring. Made only in outstanding vintages, this is a true collector’s wine and a lasting tribute to a man who shaped Tahbilk’s modern legacy.

A delicious bottle-aged Tahbilk Cabernet Sauvignon with time definitely still on its side. The nose is intense and concentrated cassis, blackcurrant and green herbal characters. The cassis and blackcurrant features on the palate where the green herbal character of tomato leaf and mint are dominate.


 

2021 Cabernet Sauvignon

The stellar rated 2021 vintage has delivered a Cabernet Sauvignon where it is the richness of fruit that resonates. Deep cassis, mint and dark plum aromas and flavours are nuanced with bay leaf, black olive and clove notes.

Tahbilk Cabernet Sauvignon begins with vibrant blackcurrant and mint, backed by firm tannins and fresh acidity. Over time, it matures into a complex wine, revealing cedar, tobacco, and smooth, refined tannins—showcasing the depth and heritage of our Nagambie Lakes vineyards.

Bright and bold, with fresh blackcurrant, blackberry, and mint notes. Firm tannins and lively acidity give it a structured, energetic feel. 

Pairing:
Perfect with grilled steak, hearty burgers, peppery sausages, and sharp cheeses like aged cheddar. Herbs like rosemary or thyme enhance the wine’s herbal character.

  

Aged Cabernet Sauvignon

VINTAGE 2015 - 2020

Taste: 
The fruit softens into complex layers of dried cherry, cedar, tobacco, and earth. Tannins become silky, creating a smooth, elegant finish.

Pairing: 
Pairs beautifully with slow-roasted lamb, braised beef, mushroom risotto, and rich cheeses like aged gouda or parmesan. Earthy and truffle-infused dishes also complement the wine’s maturity.
