NV Coueslant Chardonnay Pinot
Offering a diverse array of subtle peach, melon, red berry and savoury notes; wrapped in a cloak of crisp minerality and yeasty/biscuity characters from its secondary fermentation.
A little bit about Francois Coueslant ...
Francois was winemaker and manager at Tahbilk from 1877 to 1886, described in the 'Australasian' at the time as a "practical vigneron from France, but a gentleman of progressive ideas, ever ready to adopt new and improved methods of working."
It was his adoption of "progressive" ideas that led to what has been described as Tahbilk's early 'Golden Age'. He is credited with adding "Chateau" to Tahbilk ; a moniker that held until the year 2000, was responsible for the construction of our iconic Tower and led the fight against the vine louse phylloxera when it appeared on the Estate in 1870 - accountable at the time for decimating, amongst others, the vineyards of France and colonial Victoria.
It seemed entirely appropriate then that we recognise what has been an enduring influence at Tahbilk with his naming of our premium sparkling releases.

2018 Cane Cut Marsanne (500ml)
Offering lush tropical and citrus marmalade characters with sweet honeysuckle touches; a fresh and mineral-like grape acidity on the finish allows the delightful sweetness to shine through without being cloying.
First planted on the Estate in the 1860s, Tahbilk has the largest single holding of Marsanne worldwide including vines dating back to 1927 that are amongst the oldest in the world.
Cutting the canes of the vine and allowing the fruit to hang prior to harvest concentrates the flavours and sugars to produce a luscious wine.

“Marsanne gets to showcase its versatility at Tahbilk. Here, it knocks the dessert-style sweetie out of the park with its complexity and adroit winemaking. Striking gold/green hue. Orange peel, nougat, stone fruit and candied-fruit aromas transform into utter lusciousness on the palate. Smooth as glass. Can take chilling.”
