Desserts by Head Chef Tracey Young
This is no ordinary dessert. Each cake is crafted by our new Head Chef, Tracey Young, whose decades of baking experience shine through in every creation. Light yet indulgent, her desserts pair beautifully with her fresh spring menu, making them the perfect finishing touch to a weekday lunch.
Dish of the Month – September
Alongside her desserts, Tracey has also designed a feature dish that captures the best of the season:
Seared Duck Breast, Cavallero Nero, Tahbilk Orchard Cumquat and Shiraz/Marsanne Glaze
A crispy-skinned duck breast set on poached Italian kale, finished with a citrusy cumquat-infused jus made with fruit grown in our very own orchard.
This dish embodies what makes dining at Tahbilk special: locally sourced Victorian duck, thoughtfully paired with produce from our estate.
A Perfect Pairing
The September feature is designed to shine alongside our new release 2025 Tahbilk Sparkling Rosé. Its lively bubbles and vibrant fruit notes lift the richness of the duck and echo the brightness of the orchard cumquats.
