Whether it's the vivacious, textural and bright cranberry fruits of the inaugural Sparkling Rose, the minerally, red berry and savoury, yeasty characters of the perennial favourite Chardonnay Pinot Noir blend or the Sparkling Shiraz with its layers of dense, dark berry fruits and traditional hints of leather and earth; there is plenty to celebrate with ... and celebrate about! ... and our premium Coueslant Sparkling range.

About this winei

A little bit about Francois Coueslant ...
Francois was winemaker and manager at Tahbilk from 1877 to 1886, described in the 'Australasian' at the time as a "practical vigneron from France, but a gentleman of progressive ideas, ever ready to adopt new and improved methods of working."
It was his adoption of "progressive" ideas that led to what has been described as Tahbilk's early 'Golden Age'. He is credited with adding "Chateau" to Tahbilk ; a moniker that held until the year 2000, was responsible for the construction of our iconic Tower and led the fight against the vine louse phylloxera when it appeared on the Estate in 1870 - accountable at the time for decimating, amongst others, the vineyards of France and colonial Victoria.
It seemed entirely appropriate then that we recognise what has been an enduring influence at Tahbilk with his naming of our premium sparkling releases.

Tasting Notei

Tahbilk 2025 'Coueslant' Sparkling Rose
12.0% Alcohol | Enjoy Now to 2027/2029
Estate Mourvèdre is in the driver’s seat with this inaugural Coueslant Sparkling Rosé.
Vivacious and textural, bright cranberry and fresh red berries sit stylishly with sour cherry and dried herb notes giving a background savoury dimension.
A lovely fine bead and mouth-watering finish completes a deliciously dry sparkling wine made for good times with great company

Tahbilk NV 'Coueslant' Chardonnay/Pinot Noir
12.% Alcohol | Enjoy Now
With the Chardonnay component contributing subtle citrus notes and fresh acidity, and the Pinot Noir richness and texture this perenially popular 'Coueslant' sparkling offers a delcious array of subtle melon, citrus, red berry and savoury notes; wrapped in a cloak of crisp minerality and yeasty/biscuity characters from its secondary fermentation.
An aperitif par excellence, pour over freshly shucked oysters for a wonderfully sublime taste experience.

Tahbilk 2021 'Coueslant' Sparkling Shiraz
13.5% Alcohol | Enjoy Now to 2027/2029
"A bit of a charmer with its mix of freshness and old-school sparkling Shiraz style rich in dark fruits and spices.

That spice is just so enticing, so essential to the style, and it is delivered with an easy approachability that is truly moreish. Lots of sweet black fruits – don't worry, not overly sweet – come at you with anise, that lovely spiciness, cacao, a splash of earth and confection. Finishes with a lively juiciness.
Lots to recommend, including the price."
