Combine a challenging, low-yielding vintage that delivered Estate Reds of great depth of character and concentration with Tahbilk’s traditional red winemaking practices of open oak vat fermentation followed by time spent in a mix of large aged and smaller new oak barrels and you realise a varietally intense Cabernet Sauvignon with robust fruit the driving force ... unmistakably Tahbilk!

About this winei

Tahbilk Cabernet Sauvignon releases are crafted with a commitment to traditional winemaking values. Fermentation takes place in original open vats well over 150 years old, with maturation then in similarly aged large French oak prior to bottling. Smaller French and American oak barrels are also used, with the wine from these blended back during the final filtering and bottling.

Tahbilk Estate releases have consistently exhibited considerable richness and character. As young wines bright and fruit-forward aromas and flavours of forest herbs, black olive, eucalypt, blackcurrant and Asian spices and firm, but fine-grained, tannins are at the fore.

Then with age our history with the varietal supports the belief held by many experts that our Cabernet Sauvignon is the best performed of the Tahbilk reds in terms of ability to develop added character with time in the cellar. The tannins soften, earthy characters substitute for bright fruit but there is a complex and subtle fruit line that extends across the years.

In its youth beef and lamb, particularly with heavier more complex dishes and sauces, are go to classic food matches with Tahbilk Cabernet Sauvignon ... both meats would work well as it ages, but look to simpler dishes and sauces.

Vibrant purple colour in the glass. Typical herbal characters shine through on the nose; eucalyptus, spearmint and cocoa nibs alongside delicate blueberry, blackberry and subtle rose florals.
Intense fruit immediately hits the palate; fresh blueberries, wild berries and blackberries. Tannins are tight … feeling a little green and youthful ... however this will even out with time.
The acidity is atypical of the Cabernet Sauvignon varietal. Herbaceous edges with tomato and blackberry leaf. The wine’s structure has all the elements to age well in bottle. Drink now and then age 12 years and reap the benefits.

VINTAGE 2022
The only thing that you can guarantee about the harvest season every year is that there are no guarantees.
The season started off slowly, summer was cool and the rainfall was low in the lead up, so the expectation was for a cracking season … mother nature had other plans!
A windy spring disrupted the fruit set leading to fewer berries per bunch resulting in yields being well down ... as much as 40% with some blocks. Initially we were lulled into thinking that all was going along smoothly. We ticked along at a steady
pace, whites progressed nicely, the reds ripening well and then… wham, everything ripened at once and the usual vintage chaos was back.
There are always two clear weeks in the winery that will either make you or break you. The first is the white/rosé/red juggle and the second is the red pressa-thon. This is when we empty the fermenters, and pretty much fill them straight back up. It is about finding the balance between the initial cold soak, fermentation time and rate, time on skins post fermentation and then bringing in the next parcel of fruit. And just to make it even more fun, this changes every year.
With the low yields and challenges of this harvest the anticipation around the final release of our 2022 vintage Estate Whites and Reds has been answered with wines of great varietal character and concentration.

Intense and opaque garnet hue. Dusty cocoa, wet eucalypt leaves, cassis, kirsch, bay leaf, CWA blackberry jam, boysenberry swirl and old pipe tobacco. Modern flesh forward, yet undeniably built for longevity.
There’s an enjoyable flow from the front to the back, with those dusty, firm and plentiful tannins. The finish is dry as a bone with lingering blackberry and bay leaf. Will easily last for 20 years."
