A deliciously complex bottle-aged wine with further development potential.
Dried plum, burnt sage bush and milled sawdust, alongside supple and juicy red fruit, lovely white pepper, clove and nutmeg spice lingering on.
Enjoy over the next 10 years ... easily!

    About this winei

Our Estate Shiraz is crafted with a commitment to traditional winemaking values. Fermentation takes place in original open vats well over 150 years old, with maturation then in similarly aged large French oak prior to bottling. Smaller French and American oak barrels are also used, with the wine from these blended back during the final filtering and bottling.

The result is fruit-driven wines of much flavour and substance generally showing lifted violets, spice, and clove aromas, the palate bold and bright with wild berry and plum fruits finishing with supple and savoury tannins.

Further cellaring has been proven over the years to develop added character and complexity with earthy, leather and cedary/cigar box qualities coming to the fore, the tannins softening and comfortably sitting in the background.

When young the bold and fruit forward characters of Tahbilk Shiraz would be well suited to robust meat based stews, grilled or roast beef and strong hard cheeses especially cheddar.
With some age look to game dishes of roast duck, venison or kangaroo and the leanness and delicate flavours of veal.

Don't Just Take Our Word For It ...

    As reviewed on release ...

“Sourced from 30ha of estate vines, and matured for 18 months in both large and small predominantly French barrels for 18 months. Given the compressed vintage with everything ripening at the same time - and early - keeping track of fruit development was no easy task. This is one of the most elegant and fresh Shirazs yet produced by Tahbilk, all the right decisions made in the vineyards and winery. A typical touch of Tahbilk earth wends its way through the plum and blackberry fruit of a wine that has long since proved its longevity, more recently protected by its screwcap and with no need for time to allow the tannins to soften."
    James Halliday | www.winecompanion.com.au

“Here’s to a good-value 14.0 per cent alcohol Shiraz that would team well with veal cutlets. It’s purple-tinted crimson and has potpourri scents and juicy plum front-palate flavour. The middle palate shows glacé cherry, licorice and nutty oak and the finish earthy tannins.”
    John Lewis | Newcastle Herald

“Firm full flavoured wine with nice ripe dark red fruit characters and oak in the background”
    Winestate Magazine

"This is the juiciest Tahbilk Shiraz I’ve had in years – it’s all plump jubey purple fruit, though with a decent dose of Tahbilk earth and complete with light tannins. Quite a departure from the traditionally rustic style but a rather pleasant and jubey red.
Tahbilk Shiraz does modern (and with a swish polish).”

    Tasting Notei

    Enjoy Now to 2032/2035
The colour has lightened with bottle age and now more of a light to medium pale ruby.
Incredibly classic and unique aged Tahbilk aromas. Dried plum, burnt sage bush and milled sawdust. The tannins have softened and are well integrated into the palate where you will find supple and juicy red fruit, lovely white pepper, clove and nutmeg spice lingering on. Still got a little bit of give with acidity in check, enjoy over the next 10 years ... easily!

    Vintage Notesi

    VINTAGE 2016
Vintage 2016 started dry with only two thirds of the average rainfall for winter recorded, followed by half the usual for September and budburst and then none measurable at all in October. The vineyard managers were watering two weeks before budburst and through to January when a massive thunderstorm dumped 86 mm of rain in just two hours with some parts of the Old Tahbilk vineyards also hit by hail storm damage.
Fortunately cool windy days followed with no mould or other diseases evident.
The harvest itself was 'compressed' with many of the red blocks going through veraison at the same time as the whites, leading to the same amount of grapes being taken in but in a shorter period of time.
Despite the early and quick vintage, the flavours were good with crisp and delicate whites and reds picked at optimum ripeness showing juicy and bright fruit.
Overall a good to very good vintage in terms of quality and quantity
