Drawing on Tahbilk's traditional red wine making values, steadfastly practised in the face of changing winemaking styles and trends, both wines reflect true provenance ... wines to be thoroughly enjoyed now and into the future.
Tahbilk has some 32 hectares of Cabernet Sauvignon planted on the Estate – the oldest dating back to 1949.Tahbilk Cabernet Sauvignon releases consistently exhibit considerable richness and character with the noted potentialto develop further complexity if cellared.Crafted with a commitment to traditional winemaking values, fermentation takes place in original open oak vats (over 155 years old), followed by maturation in similarly aged large French oak barrels prior to being bottled. Smaller French and American oak barrels are also used, with the wine from these blended back during the final filtering and bottling.Whilst not having a lineage that takes it back to the Estate’s founding, there is a more than long enough history with thevarietal that supports the belief held by many experts that it is the best performed of the Tahbilk reds in terms oflongevity.

A delicious bottle-aged Tahbilk Cabernet Sauvignon with time definitely still on its side. The nose is intense and concentrated cassis, blackcurrant and green herbal characters. The cassis and blackcurrant features on the palate where the green herbal character of tomato leaf and mint are dominate.
A delicious bottle-aged Tahbilk Shiraz ... opulent and full of plum and raspberry fruits . Time in the bottle has also bought characters reminiscent of old world leather, cocoa nib, salami, clove and nutmeg to the fore. A bright acidity and supportive tannins on the finish suggesting this this wine has still got a lot more to give ...
