    A classic aged Tahbilk Shiraz ... medium-bodied with aromas and flavours of leather, cedar, earthy characters with a hint of plum on the back palate.

    About this winei

    Our Estate Shiraz is crafted with a commitment to traditional winemaking values. Fermentation takes place in original open vats well over 150 years old, with maturation then in similarly aged large French oak prior to bottling. Smaller French and American oak barrels are also used, with the wine from these blended back during the final filtering and bottling.

    The result is fruit-driven wines of much flavour and substance generally showing lifted violets, spice, and clove aromas, the palate bold and bright with wild berry and plum fruits finishing with supple and savoury tannins.

    Further cellaring has been proven over the years to develop added character and complexity with earthy, leather and cedary/cigar box qualities coming to the fore, the tannins softening and comfortably sitting in the background.

    When young the bold and fruit forward characters of Tahbilk Shiraz would be well suited to robust meat based stews, grilled or roast beef and strong hard cheeses especially cheddar.
    With some age look to game dishes of roast duck, venison or kangaroo and the leanness and delicate flavours of veal.

    A very classical aged Tahbilk Shiraz, stylistically a wine of the old world. The leather, cedar, earthy characters lead the aromas and palate with a hint of plum on the back palate. It is a true medium bodied wine, with acid and length to carry it through. Near to realising full cellaring potential but still holding up well.

    Freshness and richness are the keys to this medium-bodied Shiraz; there is as much black cherry as blackberry to the fruit on offer, the tannins ripe, and the oak making its presence felt to an unexpected degree.

    Vintage Notesi

    VINTAGE 2014
    Similarly to vintage 2013, winter started well – good rain followed the autumn break, with rainfall back to average levels. Spring rainfalls started well but tapered off with vineyard managers irrigating at budburst and through to the end of vintage.
    The season looked particularly promising until a late severe frost in mid-October hit delicate young growth in many of our low-lying plains vineyards away from the water and native tree cover of the Tahbilk billabongs.
    Spring was followed by another very hot, dry summer that resulted in an early start to the harvest with the last of the reds off by the end of March.
    Despite the hot, dry summer the whites have delicacy, crispness and definite varietal character.
    The reds show bright primary fruit, with good depth and concentration and distinct individual vineyard characters.
