Crafted with a commitment to traditional winemaking values. Fermentation takes place in original open oak vats (over 155 years old), followed by maturation in similarly aged large French oak barrels prior to being bottled. Smaller French and American oak barrels are also used, with the wine from these blended back during the final filtering and bottling.
This has remained the way over the years in the face of changing winemaking styles and trends and the resultant releases are noted as being fruit-driven wines of much flavour and substance, proven over the years to develop added character when cellared.

A very classical aged Tahbilk Shiraz, stylistically a wine of the old world. The leather, cedar, earthy characters lead the aromas and palate with a hint of plum on the back palate. It is a true medium bodied wine, with acid and length to carry it through. Near to realising full cellaring potential but still holding up well.

Freshness and richness are the keys to this medium-bodied Shiraz; there is as much black cherry as blackberry to the fruit on offer, the tannins ripe, and the oak making its presence felt to an unexpected degree.
