“A winery steeped in tradition, which should be visited at least once by every wine-conscious Australian, and which makes wines – particularly red wines – utterly in keeping with that tradition.” James Halliday
Tahbilk Shiraz and Cabernet Sauvignon are made following traditional winemaking methods.
Fermentation takes place in open oak vats, followed by a period of maturation in large 100 year old French Oak barrels prior to bottling.

Tahbilk Shiraz is sourced from nearly 30 hectares of vines planted at various times from the 1930s until the early 2000s.
The resultant Shiraz releases are noted as being fruit-driven wines of much flavour and substance, proven over the years to develop added character when cellared.

Tahbilk has some 28 hectares of Cabernet Sauvignon planted on the Estate – the oldest dating back to 1949.
The wine produced from these plantings have consistantly shown considerable richness and character over time.
Tahbilk Cabernet Sauvignon is considered by many experts to be the best Estate red for long-term cellarage.
