Tahbilk has some 32 hectares of Cabernet Sauvignon planted on the Estate – the oldest dating back to 1949. Tahbilk Cabernet Sauvignon releases consistently exhibit considerable richness and character with the noted potential to develop further complexity if cellared. Whilst not having a lineage that takes it back to the Estate’s founding, there is a more than long enough history with the varietal that supports the belief held by many experts that it is the best performed of the Tahbilk reds in terms of longevity

True to its celebrated 'best of a vintage' heritage, this is an impressive wine of great depth and character. 
Warm, dark fruits are interwoven with eucalypt and dried herbs, sweet spice notes, a dash  of black olive and cedary French oak. Expected tannins sit supportively on a finish that is  like the horizon never met … going on forever.
This notable wine is appropriately presented under a replica Tahbilk 1870s label.

"The nose is intense and concentrated cassis, blackcurrant and green herbal characters. The cassis and blackcurrant features on the palate where the green herbal character of tomato leaf and mint are dominate. The wine is true to the varietal, lifted on the front of the palate and the mouth puckering tannins follow through on the back palate. Time is still very much on its side … enjoy now or drink over the next 4-6 years."
